Our story
We did not invent a new recipe. We simply went back to the way these things have always been made — and refused to cut a single corner along the way.
Whole sesame seeds, hulled and roasted until the oil begins to wake up. Nothing is added at this stage, because nothing needs to be.
The seeds go into a stone mill that turns slowly and stays cool. Speed would heat the paste and burn the flavour, so we let the stones take their time.
What comes out is tahini and nothing else. No emulsifier to stop it separating, no oil to stretch it, no sugar to soften it. If it separates in your cupboard, that is the proof.
